When it’s cold outside…it’s time for soup!

I love a superior homemade soup, in particular when it can be chilly exterior. The other working day, I wasn’t confident what to make for supper. We have been in will need of groceries, but I was motivated by a total head of cauliflower in the fridge.
Selfmade soup is typically a weekend undertaking in our house, but due to the fact I acquired my force cooker, it can be a lot less difficult to control on a weeknight.
This is undoubtedly a recipe that could be recreated in a crock pot or on the stove (pressure cooker not necessary).
Spiced Tomato-Cauliflower-Sweet Potato Soup
(I used olive)
2 little onions, chopped
1 head cauliflower, rinsed and roughly chopped
1 big sweet potato, chopped (peeling optional)
5-10 mL (1-2 tsp) curry powder
5 mL (1 tsp) garlic powder
(or 1-2 cloves new, if you have it)
salt & pepper
1 massive can diced tomatoes
1 smaller can of coconut milk
Optional: prime with Parmesan cheese
Warmth onion, saute in oil until golden brown. Increase cauliflower, sweet potato, and curry powder. Saute for 5-10 minutes to deliver out the flavours.
Add tomatoes, coconut milk, garlic, salt, and pepper. Cook dinner right until vegetables are smooth (20 minutes in the stress cooker worked).
Mash or mix soup. I come across an immersion blender to be less difficult than a frequent blender. A potato masher can also work if you really don’t require it tremendous easy.
If you come across it thicker than you like, take into account adding additional coconut milk, broth or h2o.
I like that soup can be these kinds of an quick way to use up what you have in the home and flavour with your favorite spices!
