  • 1 tsp vanilla
  • 1/2 cup applesauce
  • 1/4 cup maple syrup or honey
  • 2 eggs
  • 1/2 cup chocolate chips optional
  • Preheat oven to 350

  • Blend dry components: oats, spices, salt, and baking soda

  • Merge wet elements: pumpkin, applesauce, maple syrup, and eggs

  • Fold soaked components gently into dry elements (introducing chocolate chips below if using)

  • Stir until eventually just blended

  • Scoop into muffin tins and bake for 20 minutes.

  • Serve warm (I keep in fridge and heat up as essential)
